Microwave Divinity

  • 4 cups sugar
  • 1 cup Karo syrup
  • 3/4 cup water
  • 1 tsp. vanilla
  • 3 egg whites
  • dash of salt
  • 1 1/2 cup pecans chopped


  1. Combine sugar, Karo, salt and water in a 2 quart bowl. Microwave on high for 18-19 minutes stirring every 5 minutes (make sure mixture doesn’t start to turn yellow—if it does, is has cooked too long).
  2. Beat egg whites until stiff. Pour syrup mixture gradually into egg whites beating constantly. Continue for about 10-12 minutes until mixture looses its shine. Fold in vanilla and pecans.
  3. Spoon onto waxed paper in rounded tablespoons. Press pecan halves into each piece. let cool and dry.
  4. Store in airtight container.
  5. makes about 90 pieces.
