Lentil and Wild Rice Soup

Ingredients

  • 1/2 cup lentils
  • 3 cups water
  • 1 (6oz.) pkg. long-grain and wild rice blend
  • 3 cups vegetable broth
  • 1 (10oz.) pkg. frozen mixed vegetables
  • 1 cup milk
  • shredded cheddar cheese for garnish

Directions

  1. Rinse and sort lentils and combine with water in a saucepan. Bring to boil; reduce heat to low. Cover and simmer 5 minutes. Remove from heat; let stand 1 hour. Rinse and drain.
  2. Cook rice according to package directions. Add the lentils to the rice. Add vegetable broth, frozen vegetables and milk.
  3. heat on medium and then ladle into bowls. Garnish with cheese.
