Fux Cassoulet

Ingredients

  • 1 (15 to 19oz.) can black beans, rinsed.
  • 1 (15 to 19oz.) can white beans, rinsed
  • 1 (15 to 19oz.) can dark red kidney beans, rinsed
  • 1 (14oz.) pkg. Kielbasa (diagonally sliced into 1-inch pieces)
  • 1 (15oz.) can tomato sauce
  • 1 1/2 cup thinly sliced carrots
  • 2 small onions, thinly and separated to rings
  • 1/2 cup beef broth
  • 2 Tbsp. firmly packed light brown sugar
  • 1 1/2 tsp. dried thyme
  • 2 cloves minced garlic

Directions

  1. Heat oven to 375 degrees.
  2. In a 3-quart casserole dish, mix all the beans, slices of Kielbasa, tomato sauce, carrots onions, beef broth brown sugar, thyme and garlic.
  3. Cover and bake about 1 hour or until hot and bubbly and carrots are tender.
