Turkey legs

This is intended to be for wild turkey, but can be used on raw farm-raised turkey or other game birds.

Serves 8 people

Ingredients

  • 2 liters lemon-lime soda
  • 1 cup orange juice
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 5-7 lbs. turkey legs

Directions

  1. Combine soda, orange juice, soy sauce and brown sugar. Let turkey legs sit in marinade in refrigerator at least three days.
  2. Heat smoker to 250 degrees. Cook legs about 3 hours, turning each hour. Cook to an . internal temperature of 180 degrees.
  3. Allow legs to relax up to 30 minutes before serving – or allow them to chill, then reheat, to redistribute and intensify flavor.
