Smoked Meatloaf

Serves 6 people

Ingredients

  • 2 lb. ground beef
  • 1 lb. sweet Italian sausage
  • 1 small onion, chopped
  • 4-6 fresh jalapenos, chopped (optional)
  • 1 cup Italian-style bread crumbs
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1/4 cup Worcestershire sauce
  • 1lb. bacon (optional)

Directions

  1. Mix ingredients (remove veins and seeds from jalapenos) except Worcestershire sauce and bacon.
  2. Form a loaf. Wrap bacon slices around loaf, if desired.
  3. Cook in smoker one hour at 300 degrees.
  4. Place loaf on foil, add Worcestershire and seal foil. Cook 30 minutes, internal temperature should reach 160 degrees. Allow meat to rest 20 minutes in foil before serving.
