Calas (Rice Fritters)

New Orleans sweet treat from the days of street vendors and the “Cala Women”.

Ingredients

  • 6 Tbsp. flour (plain)
  • 1/3 cup sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1/8 tsp. nutmeg
  • Pinch cinnamon
  • 2 cups cooked rice
  • 2 eggs
  • Cooking oil
  • Powdered sugar

Directions

  1. In a large pan, pour at least 1 inch of oil and heat up to 360 degrees.
  2. Mix together flour, sugar, baking powder, salt, vanilla and nutmeg.
  3. Beat eggs and rice together in a large bowl. Add dry ingredients to the rice and egg mixture. When thoroughly mixed, drop spoonfuls into hot oil. Fry until golden brown. Drain on paper towel.
  4. Sprinkle with powdered sugar and serve while hot.
