Chinese 5-Spice Oatmeal Cookies

Ingredients

  • 2 cups quick-cooking rolled oats (not instant)
  • 1 1/2 cups all0-purpose flour
  • 1 cup coarsely ground almonds
  • 1 1/2 tsp. Chinese five spice powder
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 1/2 tsp. real vanilla extract

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mix together the oats, flour, ground nuts, 5-spice powder, cinnamon, baking powder, and salt.
  3. In another bowl, using an electric mixer, cream the butter and both sugars until light and smooth.
  4. Add eggs and vanilla to the butter mixture and beat well.
  5. Add flour mixture to the butter mixture and beat until blended.
  6. Drop by mounded tablespoonsful onto lightly greased cookie sheets, leaving about 1 1/2 inch gap between each mound of batter.
  7. Bake at 350 degrees F. for 12-15 minutes or until done to your liking.
  8. Cool on wire racks.
  9. makes about 3 dozen
