Blueberry Jam

Ingredients

  • 3 3/4 cups crushed blueberries
  • 1/4 cup lemon juice
  • 1/2 Tbsp. grated lemon rind
  • 8 cups sugar
  • 1 cup liquid pectin

Directions

  1. Pick over and wash berries. Crush well and add lemon juice and rind. Add sugar and heat to boiling, stirring constantly. Boil rapidly for 1 minute. Remove from heat and stir in pectin.
  2. Skim and pour into clean hot glasses. Seal with paraffin at once.
