Blueberry Peach Freezer Jam

Ingredients

  • 1 cup crushed blueberries
  • 1 1/2 cups granulated sugar
  • 1 pouch (1.50 oz.) freezer jam pectin
  • 3 cups finely grated, peeled and pitted peaches
  • 1 Tbsp. grated lemon zest
  • 1 tsp. lemon juice

Directions

  1. Place blueberries in a microwave-safe glass pie plate. Microwave on 100 % power, stopping the microwave several times to stir and crush the berries, until the mixture reaches a boil, about 2 minutes.
  2. Combine sugar and pectin in a medium bowl. Stir until thoroughly blended. Add blueberries, peaches, lemon zest and juice to pectin mixture and stir constantly for 3 minutes.
  3. Ladle jam into plastic or glass freezer jars, leaving 1/2 inch head space. Apply lids tightly. Let jam stand at room temperature until thickened, about 30 minutes. Serve immediately, if desired. Refrigerate for up th three weeks of freeze for up to one year.
