Cantaloupe Jam

Ingredients

  • 7 cups ripe cantaloupe pulp
  • 2 cups sugar
  • 2 Tbsp. lemon juice
  • 1 tsp. grated lemon rind

Directions

  1. Place cantaloupe in a large saucepan. Bring to a boil, over low heat. Boil, stirring occasionally, until smooth. Stir in sugar, lemon juice and rind. Continue boiling, 15-20 minutes. Spoon, while hot, into hot sterilized jars. Seal with paraffin.
