Caantaloupe- Peach Conserve

Ingredients

  • 4 cups chopped cantaloupe pulp
  • 4 cups chopped fresh peaches
  • 6 cups sugar
  • 1/4 cup lemon juice
  • 1/2 tsp. nutmeg
  • 1/4 tsp. salt
  • 1 tsp. grated orange rind
  • 1/2 cup coarsely chopped walnuts

Directions

  1. Combine cantaloupe pulp and chopped peaches in a large heavy saucepan. Bring to a boil, over low heat. Boil for 20 minutes, stirring occasionally.
  2. Add sugar and lemon juice. Mix until well blended. Continue boiling, stirring frequently, until mixture is thickened.
  3. Add nutmeg, salt, orange rind and walnuts. Mix well. Boil for 3 minutes, stirring constantly. Spoon, while hot, into hot sterilized jars. Seal with 1/8-inch layer of paraffin.
  4. Variation: Use 4 cups watermelon instead of peaches and cantaloupe.
