Cherry-nectarine Jam

Ingredients

  • 1 lb. ripe tart red cherries
  • 1 1/4 lb. nectarines
  • 2 Tbsp. lemon juice
  • 1 1 3/4 oz. pkg. powdered fruit pectin
  • 4 cups sugar

Directions

  1. Sort, wash and remove stems form cherries. Pit and coarsely chop the cherries; measure 1 1/2 cups. Pit and chop the nectarines; measure 2 cups.
  2. In 10-quart kettle or Dutch oven combine the chopped fruit and lemon juice. Add the powdered fruit pectin to the mixture, mix well.
  3. Bring mixture to full rolling boil. Stir in sugar. Bring again to full rolling boil, stirring constantly. Boil hard, uncovered, for 1 minute. Remove from heat; skim off foam. Pour into hot, sterilized half-pint jars; seal.
