Cora Nivens’ Fig Preserves

Ingredients

  • 1 lb. figs
  • 3/4 lb. granulated sugar
  • 1 cup water
  • Juice from 2 or 3 oranges
  • Juice from half a lemon

Directions

  1. Wash and peel figs before measuring. Ina large cooking pot, make a syrup by boiling the sugar, water, orange and lemon juice. Drop in figs and return to a full boil. Reduce hear and simmer until the juice is thick.
  2. Pour into sterilized jars, seal and process in a boiling water bath for 10 minutes.
