Wood Roasted Salmon Tart

A delicious and different ‘take’ on those self-crusting quiches.
Just as nice cold, to take on a picnic perhaps.
Can be made with lactose free milk, dairy free spread, and gluten-free self-raising flour for those with intolerances.

Prep time: 10 minutes
Cook time: 30 minutes
Serves 6 people

Ingredients

  • 3 eggs
  • 1 1/2 C milk
  • 50 g butter or margarine, melted
  • seasonings to taste
  • 1/4 C chopped parsley and chives
  • 1/4 C grated parmesan
  • 1/2 C self raising flour
  • 200 g wood roasted salmon
  • cherry tomatoes, halved
  • 2 T capers, optional

Directions

  1. Line 22cm tart tin with baking paper.

  2. Whisk eggs and seasonings, add milk, butter, parsley, flour and cheese.

  3. Pour into prepared tin, and bake at 180oC for 20 minutes.

  4. Remove from oven, and gently top with flaked salmon, tomatoes and capers.

  5. Bake further 10 minutes.
