Ginger Apple Sauce

Serves 4 people

Ingredients

  • 3 lb. apples, washed
  • 1/4 cup apple cider
  • 1/3 cup sugar
  • 1 Tbsp. minced candied ginger
  • 1/4 tsp. ground ginger
  • 1 pint vanilla ice cream, optional

Directions

  1. Core apples. Cut into eighths.
  2. Combine apples and cider in medium saucepan.
  3. Cook, covered, over medium heat until apples are soft, about 20 minutes.
  4. Press apples through a food mill. Discard skins.
  5. Stir in sugar, candied ginger and ground ginger.
  6. Serve warm with ice cream or refrigerate until cold and serve as a snack.
