Homemade Peanut Butter

Ingredients

  • 2 cups Plus an optional 1/2 cup roasted, shelled, peanuts, divided use
  • 1 Tbsp. peanut or other vegetable oil
  • 1/2 tsp. salt, optional (omit if using salted peanuts)

Directions

  1. Place the 2 cups roasted peanuts, peanut oil and salt, if using, in a blender or food processor. Process on highest speed for 2 to 3 minutes. The ground peanuts will for a ball which will slowly disappear.
  2. If necessary, stop the machine and scrape the sides of the container with a rubber spatula. Continue processing until mixture becomes spreadable.
  3. When desired consistency has been reached, stir in the 1/2 cup finely chopped roasted peanuts to produce chunky-style peanut butter, if desired.
  4. Place in a tightly closed container and store in refrigerator. During storage, oil may rise to the top, if so, stir before using.
  5. 1 cup smooth or 1 1/2 cup chunky
