Horseradish Jelly

Ingredients

  • 3 1/4 cups sugar
  • 1/2 cup prepared horseradish
  • 1/2 cup cider vinegar
  • Green food coloring
  • 1/2 cup liquid pectin

Directions

  1. Place first 3 ingredients in large saucepan and stir over heat until sugar is dissolved. Add enough food coloring to tint desired shade. Bring to boil, then stir in pectin all at once. Bring to full rolling boil, stirring. Remove from heat, skim off foam and pour at once into hot sterilized jelly glasses to within 1/2 inch from top. Seal with hot metal lids and rings.
  2. makes 3 half-pint jars
