Kiwi Preserves

Ingredients

  • 2 1/2 lb. kiwi
  • juice of 1 lemon
  • 4 cups sugar
  • 1 cup water

Directions

  1. Wash, peel and quarter kiwi. Place in a large cooking pot and sprinkle with lemon juice; let stand 1 hour.
  2. Add sugar and water. Bring to a boil and continue boiling 15 minutes. Remove fruit and set aside.
  3. Continue cooking syrup and bring to a hard boil. Pour into hot, sterilized jars and seal. Process in a boiling water bath for 10 minutes.
