low-Cal Strawberry-Pear Jam

Ingredients

  • 2 cups fresh strawberries, crushed
  • 3 medium pears, peeled, cored and chopped (2 cups)
  • 1 cup water
  • 2 Tbsp. lemon juice
  • 1 1 5/8 oz, pkg. (2 envelopes)low-calorie strawberry-flavored gelatin
  • Liquid artificial sweetener to equal 1/2 cup sugar

Directions

  1. In medium saucepan, combine strawberries, pears, water and lemon juice. Cook and stir until mixture comes to boiling.
  2. Stir in gelatin. Return mixture to boiling, stirring constantly. Boil hard, uncovered, for 1 minute, stirring constantly. Remove from heat; stir in artificial sweetener. Pour into hot, sterilized half-pint jars or glasses; seal. Store in the refrigerator up to 6 weeks or in freezer for as long as 1 year.

  3. makes 4 half-pints.
