Mint Jelly (1935)

Ingredients

  • 1 cup mint leaves (packed tightly)
  • 1 cup apple juice
  • 3/4 cup sugar
  • 1 cup boiling water

Directions

  1. Pour boiling water over mint leaves and allow to steep one hour. Press the juice from the leaves and add 2 Tbsp. of this extract to apple juice and sugar. Boil rapidly to jelly stage. Tint with green vegetable coloring.
  2. For use with pork roast, as a garnish., to be used at once.
