Pork Chops a la Lela

Ingredients

  • 1/2 cup panko bread crumbs
  • 1 Tbsp. grated parmesan cheese
  • 1 tsp. garlic salt
  • 1 tsp. paprika
  • 1/2 tsp. mustard powder
  • 2 (1-inch thick) pork chops
  • 2 Tbsp. olive oil
  • 1 small onion, finely chopped
  • 14 cup balsamic vinegar
  • 1/4 cup dry white wine
  • 2 Tbsp. capers

Directions

  1. Combine panko, cheese, garlic salt, paprika and mustard powder. Coat chops with mixture.
  2. Heat oil in skillet over medium-high heat. Cook chops, turning once, until cooked through. (Pork is safe to eat when it reaches an internal temperature of 145 degrees.) Remove to warm plate.
  3. Drain all but 2 Tbsp. of drippings from the pan. Add onion and sauté until tender. Add vinegar and wine, scraping up browned bits form the bottom of the pan. Bring to a boil and simmer until reduced by half. Add capers. Serve as a sauce over the pork.
