Rhubarb Bread (not sweet)

Ingredients

  • 1/2 cup warm water
  • 2 Tbl. oil (I used canola oil)
  • 1 1/2 cup chopped rhubarb
  • 2 eggs
  • 1 tsp. salt
  • 3 cups flour
  • 1 Tbl. Sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 tsp. active dry yeast

Directions

  1. Start 3 hours 30 minutes in advance!

  2. Add all ingredients into breadmaker in order given, making a small well in the ingredients before adding the yeast.

  3. Only use the breadmaker to knead the dough (at least our breadmaker – it’s too much dough to hold after it rises – would be different in larger machine).

  4. Once through knead cycle (about 30 minutes), remove and put lightly greased bowl, cover with kitchen towel, and place in warmer area to rise. Let rise for 40 minutes.

  5. Punch down for 25 seconds. Let rise again for another 55 minutes.

  6. Put into greased bread pan and bake at 350 degrees for about 35 minutes, depending on how browned you want it.

  7. Remove from pan and let cool for 15 minutes.
