Grilled Cheese Italian Style

Haven’t tried.
A quick and easy weeknight dinner, would be really good with a bowl of cream of tomato soup!

Ingredients

  • Loaf of Italian or French Bread, sliced
  • Sliced Mozzarella or Provolone Cheese
  • Tomato, sliced
  • Jar of Pesto
  • Olive Oil

Directions

  1. Using two slices of bread and a flat griddle pan or large skillet…

  2. Brush one side of bread slices with olive oil. Place on griddle until lightly browned on that one side only.

  3. Working quickly…Remove from griddle. On the grilled brown side start to assemble your sandwich…Spread pesto on, top with a slice of the cheese, top with a slice of tomato. Finally top with the other browned on one side slice of bread. Be sure the two “raw” sides of the sandwich are facing out.

  4. Brush both raw outsides with olive oil, put back on griddle, browning both sides. Grill until cheese is melted and bread is browned.
