Pear- Pineapple Honey

Ingredients

  • 3 lbs. ripe pears (about 9 cups sliced)
  • 1 cup canned crushed pineapple, drained
  • Grated rind and juice of 1 fresh lime
  • 5 cups sugar

Directions

  1. Wash, pare, core and slice pears. Force through food chopper, using fine blade.
  2. Combine pears and pineapple. Add lime rind and juice, then add sugar and cook over low heat, stirring frequently, 20 minutes, or until thick.
  3. Pour into hot sterilized jars and seal.
  4. makes about 8 half-pint jars.
