Prune-Walnut Conserve

Ingredients

  • 4 lemons, thinly sliced
  • 2 cups sugar
  • 1 pkg. (12 oz.) pitted prunes, each cut in half
  • 1 1/4 cups coarsely chopped walnuts
  • 1/4 to 1/2 tsp. nutmeg
  • 1/4 cup port

Directions

  1. Cook lemon slices, uncovered, in 4 cups water 20 minutes, or until slices are tender.
  2. Drain off liquid and measure (you will need 3 cups; add water if necessary to make up amount).
  3. Put back in saucepan with lemon slices, sugar and prunes. Cook over medium heat, stirring occasionally, 30 minutes, or until liquid is slightly syrupy.
  4. Remove from heat and stir in remaining ingredients. Ladle at once into hot sterilized jars or glasses and seal.
  5. makes 6 half-pint jars
