Pyracantha Berry Jelly (Firethorn bush)

They are not REALLY poison. The thorns of the bush will cause a rash, but the berries are edible for birds and people

Ingredients

  • 6 cups berries, washed
  • 3 cups water
  • 1 pkg. powdered pectin
  • juice of 1 grapefruit
  • juice of 1 lemon

Directions

  1. Combine the water and berries, and boil for 20 minutes in a large saucepan. Strain to make 4 1/2 cups liquid.
  2. Add pectin and juices. Bring to a full rolling boil and hard boil for one minute, stirring constantly. Add the sugar.
  3. Bring to a full boil again and boil for 5 minutes. Pour into jelly glasses and seal.
