Rose Petal Jelly

this is surprisingly good, and pretty too.

Ingredients

  • 1 cup rose petals , well packed
  • 1/2 cup rose water or 1 tsp. rose extract
  • 3/4 cup water
  • 1 13 cup sugar
  • 1 Tbsp. honey
  • 1 tsp. lemon juice

Directions

  1. Pick tender rose petals until you have 1 well-packed cup. Cut into fine pieces and wash in a colander or large strainer.
  2. Place petals, rose water and water in a saucepan and simmer 5 minutes or until petals are soft.
  3. Strain petals and measure 1/2 cup of remaining liquid (add water if needed to reach 1/2 cup).
  4. Return liquid to saucepan. Add sugar and honey and bring to a rapid boil. Return petals to saucepan and reduce heat. Simmer very slowly for 20 minutes, stirring constantly, then add lemon juice and cook for 5 minutes more. Pour into heated jars and seal.
