Sage Jelly

Ingredients

  • 1/2 cup boiling water
  • 3 Tbsp. sage
  • 3 3/4 cups sugar
  • 1 1/2 cups sweet apple cider
  • Yellow Food coloring
  • 1/2 cup liquid pectin

Directions

  1. Combine boiling water and sage, cover and let stand 15 minutes. Strain through fine cheesecloth and add water to make 1/2 cup.
  2. Add sugar and cider and heat to boiling. Add enough coloring to tint a light yellow. Add pectin, stirring constantly. Boil hard 1 minute.
  3. Remove from heat, skim and pour into clean hot glasses. Seal, and process in hot water bath 10 minutes.
  4. Serve with pork or poultry.
  5. makes 5 (8oz.) jars
