Speedy Cranberry Preserves

Ingredients

  • 1 pkg. (1 lb.) frozen cranberries, thawed
  • 3 cups sugar
  • 1/4 cup water
  • 1 pkg. (3oz.) strawberry flavored gelatin

Directions

  1. Clean cranberries thoroughly. Wash and drain. Place in a large bowl. Add sugar and water. Cover and refrigerate overnight.
  2. Place cranberries in a saucepan. Bring to a boil over medium heat. Boil for 10 minutes, stirring occasionally. Remove from heat. Add gelatin. Stir until gelatin is completely dissolved.
  3. Pour into hot sterilized jars. Seal. Cool and refrigerate until ready to use., or process in hot water bath 10 minutes. Check seals.
  4. makes 2 cups

  5. note: 5 cups fresh rhubarb cut into 1-inch pieces, may be substituted for cranberries, omitting water.
