Spiced Coffee Jelly with Rum Cream

Ingredients

  • 4 cups hot strong coffee
  • 2 whole cloves
  • 1 cinnamon stick
  • 2 envelopes unflavored gelatin
  • Sugar
  • 1/3 cup chopped nuts
  • 1 Tbsp. minced candied ginger
  • 2 Tbsp. rum
  • 1 cup heavy cream, whipped

Directions

  1. Simmer coffee and spices 10 minutes; remove spices. Soften gelatin in 1/3 cup cold water. Add coffee and 3/4 cup sugar; stir until gelatin is dissolved.
  2. Chill until mixture begins to set. Add 2 Tbsp. sugar and the rum to cream. Unmold jelly and serve with rum cream.
