Spiced Figs

Ingredients

  • 1/2 cup baking soda
  • 3 quarts figs
  • 2 quarts boiling water
  • 2 tsp. whole cloves
  • 1 to 2 sticks cinnamon
  • 1 cup cold water
  • 6 cups granulated sugar
  • 1 cup cider vinegar

Directions

  1. Sprinkle soda over figs, add the 2 quarts boiling water and let stand 5 minutes. Remove stems, but do not peel.
  2. Tie cloves and cinnamon in a cheesecloth bag.
  3. In a large saucepan or Dutch oven, place the 1 cup cold water, the sugar, vinegar and the bag of spices. Bring to a boil. Drain figs and add to sugar mixture. Boil 10 minutes every morning for 3 mornings.
  4. On the third day, after boiling, pack in sterilized pint jars. Pour in any remaining syrup leaving 1/2-inch headspace. Seal.
  5. Process in a simmering hot water bath for 10 minutes.
