Tomato Jam

Ingredients

  • 3 lbs. ripe tomatoes, cored and chopped
  • 1 large onion, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 cups granulated sugar
  • 2 tsp. salt
  • 1/4 to 1/2 tsp. ground black pepper
  • 2 Tbsp. cider vinegar
  • 2 tsp. balsamic vinegar
  • 2 slices thick-cut bacon, cooked and crumbled, optional

Directions

  1. In a large pot combine tomatoes, onions, jalapeno pepper, sugar, pepper and vinegars and bring to a boil over high heart, stirring frequently. Stir in bacon if desired, reduce heat to a simmer and cook, stirring occasionally, until mixture is very thick, about 2 hours.
  2. Use immediately, or transfer to containers and refrigerate or freeze.
