Watermelon Preserve

Ingredients

  • 8 cups peeled and diced watermelon rind
  • 4 cups water
  • 1 1/2 tsp. salt
  • 4 cups sugar
  • 1 lemon, thinly sliced
  • 1 orange, thinly sliced
  • 1 cinnamon stick, crushed
  • 1 tsp. whole cloves

Directions

  1. Combine watermelon rind, water and salt in saucepan. Bring to a boil. Cook until tender. Drain. Stir in sugar, lemon and orange slices.
  2. Place crushed cinnamon and cloves in the center of a 4-inch square of cheesecloth. Tie opposite corners to form a bag. Add to the rind mixture.
  3. Cook over low heat, stirring occasionally, until mixture thickens and is clear, about 30 minutes. Remove cheese cloth bag. Spoon, while hot into hot sterilized jars. Seal.
  4. makes about 2 1/2 quarts
