Apple Onion Relish

Ingredients

  • 2 Tbsp. vegetable oil
  • 3 onions, chopped
  • 3 garlic cloves, minced
  • 1/2 cup sugar
  • 1/3 cup cider vinegar
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground cinnamon
  • 2 Golden Delicious apples, peeled, cored and diced
  • 1 cup golden raisins
  • 2 Tbsp. apple jelly
  • 1/4 tsp. salt

Directions

  1. Heat oil in a large nonstick skillet. Add onions, garlic and sugar; cook, stirring occasionally, 35 ,minutes or until caramelized.
  2. Stir in vinegar and cook 1 minute or until nearly evaporated. Add cumin, ginger and cinnamon; cook, stirring occasionally, 7 to 8 minutes.
  3. Add apples and raisins; cook 4 minutes or until apples are crisp-tender and raisins have plumped.
  4. Remove from heat and stir in jelly, salt and pepper, stirring until jelly melts. Serve warm or at room temperature.
