Chicken Enchiladas

Ingredients

  • 2 cups shredded chicken breasts
  • 1 7oz green Chili Sauce (Mrs. Renfro's)
  • 1 jar salsa (prefer meijer bean & corn )
  • 1/2 tsp. salt
  • 2 cups whipping cream
  • 12 white corn tortillas (mission brand)
  • 1 1/2 cups of Monterrey jack cheese

Directions

  1. 1 Combine cooked chicken & green chili sauce and salsa in a large measuring cup

  2. 2 mix salt & whipping cream in a large glass pie plate

  3. 3 microwave, fry or heat in oven wrapped tortilla shells to keep them moist

  4. 4 Dip warm tortillas in the whipping cream mixture

  5. 5 fill the tortilla w/ the chicken mixture

  6. 6 Roll the filled tortilla & place in a ungreased 13×9 glass pan

  7. 7 Pour the remaining whipping cream over the tortillas

  8. 8 Sprinkle w/ the cheese

  9. 9 bake @ 350 degrees for 10-20 minutes , or until thick & bubbling
