Frogeye Salad

Ingredients

  • 1 box Acine De Pepe
  • 3 quarts water
  • 1 Tb. oil
  • 1 Tb. salt
  • ***
  • 1 Cup sugar
  • 2 1/2 tsp. salt
  • 2 Tb. flour
  • ***
  • 3 cans drained mandarin oranges
  • 2 cans of 20 oz. pineapple tidbits
  • 1 can of 20 oz. crushed pineapple
  • 1-9 oz. cool whip
  • 1 cup or more miniature marshmallows

Directions

  1. Boil the pasta in the water with the oil and salt till done

  2. Rinse well by running cold water over it. In separate saucepan mix the pudding

  3. Gradually add 2 beaten eggs mixed with 1 3/4 cup pineapple juice. Add to the sugar and flour mixture. Cook and stir till thick. Add 1 Tb. lemon juice when it cools to room temperature..

  4. Mix with the pasta and refrigerate over night. Next add the fruit and marshmallows.
