Corn Chowder

Serves 4 people

Ingredients

  • 5 slices bacon (thin slices)
  • 1 medium onion, thinly sliced and separated into rings
  • 2 medium potatoes, diced (1 1/2 cups)
  • 1/2 cup water
  • 1 17oz. can cream-style corn
  • 2 cups milk
  • 1 tsp. salt
  • dash pepper
  • butter or margarine

Directions

  1. In a large saucepan, cook bacon till crisp. Remove 3 Tbsp. bacon drippings in saucepan, discard remaining.
  2. Add onion rings and cook until slightly browned. Add diced potatoes and water.
  3. Cook slowly until potatoes are tender. Add corn, milk, salt and pepper. Cook until heated through.
  4. Pour into warmed bowls; top each serving with crumbled bacon and a pat of butter or margarine. Serve with crackers.
