Casserole Espanol

Ingredients

  • 1 lb. mild seasoned sausage
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 2 15 oz. cans chili beans
  • 1 egg
  • 2/3 cup milk
  • 2 1/2 Tbsp. water
  • 1/2 tsp. chili powder (divided use)
  • 1 12oz. pkg. corn muffin mix

Directions

  1. In a large skillet, brown sausage, breaking it into small chunks. Remove sausage with slotted spoon; set aside.
  2. Pour off all but 1 Tbsp. fat. Add onion and garlic; sauté until onion is tender. Stir in beans, sausage, water and 1/4 tsp. chili powder.
  3. Pour mixture into a shallow 2-quart casserole dish. Combine corn muffin mix, milk, egg and remaining chili powder; spoon around top edge of casserole. Bake in 350 degrees oven for 40 minutes.
