Blue Cheese-Onion Relish

Ingredients

  • 1 Tbsp. salad oil
  • 2 large onions, sliced
  • 1/4 cup balsamic or red wine vinegar
  • 1 tsp. sugar
  • 4 oz. Cambozola or gorgonzola cheese

Directions

  1. in a 10- to 12-inch pan, combine salad oil and onion slices. Stir over medium-high heat until onions are limp, about 15 minutes.
  2. Pour onions into a bowl and add balsamic vinegar and sugar; mix well. Cool, completely, then stir in crumbed cheese.
  3. Serve at room temperature with sliced hot beef steak. If made ahead, cover relish and let stand up to 4 hours at room temperature, or chill up until next day.
  4. makes 3 cups, 6 servings
