Brandied Pate

Ingredients

  • 1/2 cup butter
  • 1 small onion, sliced
  • 1 lb. chicken livers
  • 3/4 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/4 tsp. pepper
  • 1/8 tsp. nutmeg
  • 3 Tbsp. brandy

Directions

  1. Heat 1/4 cup butter in skillet, add onion and cook until softened. Add chicken livers and cook about 3 minutes on each side, just until pink in center.
  2. Place contents of skillet in blender container; add remaining 1/4 cup butter, seasonings and brandy. Whirl until smooth. Refrigerate until firm.
  3. makes 2 cups
