Zingy lemon cookies

Ingredients

  • 110g butter, softened, plus extra for greasing
  • zest of 1 lemon
  • 50g caster sugar
  • 150g self-raising flour, plus extra for dusting
  • icing sugar, to sprinkle

Directions

  1. Preheat the oven to 190˚C/fan 170˚C/gas 5. Grease 2 large baking trays and set aside.

  2. Beat the butter and sugar in a large mixing bowl until light and fluffy. Add the zest and flour and mix thoroughly.
  3. Put some flour on your hands, and roll 1 teaspoon of the mix into a small ball. Place on the baking trays, repeating until you have about 24. Flatten the balls to cookie shapes.

  4. Bake for 8-10 minutes, or until golden brown. Cool on the trays for 10 minutes, then place on a wire rack to cool completely.
  5. Once cool, sprinkle over a little icing sugar using a sieve, and serve.
