Caramelized Onion Chutney

Ingredients

  • 1 Tbsp. neutral flavored oil, such as sunflower
  • 1 1/2 lbs. sweet onions, cut in half and thinly sliced
  • 2 Tbsp. brown sugar
  • 1//2 cup raisins
  • 1/4 cup cider vinegar
  • Pinch crushed red pepper flakes
  • 1/4 tsp. kosher salt

Directions

  1. Heat the oil in a large skillet over medium-low heat. Add the onions and sugar, stir to combine and cook, uncovered, stirring occasionally, for 1 hour to 1hour 15 minutes, ot until the onions are very soft , dark golden brown and sweet.
  2. Stir in remaining ingredients and cook, stirring occasionally, until the vinegar cooks off and the raisins soften.
  3. Let cool, then transfer to a covered container. Will keep, refrigerated, for aobut 1 week.
  4. makes 1 cup
