Celery Relish

Ingredients

  • 1 quart diced celery
  • 1 green pepper, seeded and chopped
  • 1 red pepper, seeded and chopped
  • 1 1/2 cup chopped onions
  • 1 cup sugar
  • 1 cup white vinegar
  • 1 Tbsp. salt
  • 1 1/2 Tbsp. mustard seed
  • 1/4 tsp. turmeric

Directions

  1. Combine celery and peppers in a large saucepan. Cover with water. Bring to boiling; remove from heat; let stand 10 minutes. Drain thoroughly. Add remaining ingredients.
  2. Bring to boiling; reduce heat; simmer 5-7 minutes or until celery is just tender. Pack into sterilized jars. Seal.
  3. makes 2 pints
