Cock of the Walk Pickled Onions

Ingredients

  • 1 gallon sliced onion, center part only (see note)
  • 1 1/2 cups sugar
  • 3 cups (24oz.) white vinegar (see note)
  • 1 tsp. ground black pepper
  • 2 tsp. salt
  • 3 cups (24 oz.) water

Directions

  1. Place onion in an extra-large crock or nonreactive container. Dissolve sugar in vinegar, add pepper, salt and water and mix well. Pour over onion and let pickle for 2 days.
  2. Note: It is important to use the center part of the onion and white vinegar
