Cranberry- Pineapple Relish

Ingredients

  • 1 (12 oz.) can crushed pineapple in its own juice
  • 1 (12 oz.) pkg. fresh cranberries
  • 1/2 cup granulated sugar
  • 1/2 cup chopped walnuts OR pecans
  • 1 1/2 tsp. lemon juice
  • 1/8 tsp. ground cloves

Directions

  1. Drain pineapple thoroughly, collecting juice in a large measuring cup. Add enough water to cup to measure 1 cup juice.
  2. Place liquid in saucepan; add cranberries and sugar. Stir over high heat until sugar dissolves and mixture comes to a boil.
  3. Continue to boil until most berries burst and mixture is thick, stirring constantly, 6 to 8 minutes. Remove from heat.
  4. Mix in remaining ingredients; transfer to serving dish and cool at room temperature. Refrigerate until serving time.
