Cranberry Relish with Ginger

Ingredients

  • 2 large (about 6 oz. total) tangerines or 1 medium orange
  • 1 bag (12 oz.) fresh or frozen cranberries
  • 1/4 cup crystalized ginger
  • 1/3 to 1/2 cup sugar

Directions

  1. Cut tangerines in half, remove and discard seeds, and cut into 1-inch chunks. Coarsely chop or grind tangerines in a food processor or a food chopper fitted with a medium blade.
  2. And cranberries and ginger; coarsely chop or grind. Stir in sugar to taste. Serve, or cover and chill up until the next day.

  4. Cranberry Relish with Port

  5. Follow recipe above , omitting crystalized ginger and adding 1/3 to 1/2 cup apricot jam (to taste) and 1/4 cup port.
