Fresh Refrigerator Pickles

Ingredients

  • 3 large (about 1 1/2 inches around) cucumbers or 2 large English cucumbers
  • 1 medium green bell pepper, seeds and stem removed
  • 1 medium onion, finely chopped
  • 1 Tbsp. salt
  • 2 tsp. celery seed
  • 3/4 cup sugar
  • 1/2 cup white wine vinegar

Directions

  1. Cut unpeeled cucumbers into 1/16 inch thick slices. Finely chop green pepper and place in a bowl along with the cucumbers and onion.
  2. Sprinkle with salt and celery seed and toss gently until well blended. Let stand at room temperature for 1 hour.
  3. Combine sugar and vinegar, stir until sugar is dissolved. Pour over vegetables and toss gently until well blended. Cover and refrigerate.
  4. Pickles are ready to eat in about 24 hours.
