Green Tomato Pickle

Ingredients

  • 2 lbs. green tomatoes (7 or 8 medium)
  • 6 cups grated cabbage
  • 6 medium white onions, peeled and chopped
  • 1/2 cup salt
  • 1 cup grated horseradish
  • 2 green peppers, finely chopped
  • 1 Tbsp. dry mustard
  • 1 tsp. pepper
  • 2 or 3 cups boiling cider vinegar

Directions

  1. Wash tomatoes and cut in sections. Mix with grated cabbage and chopped onions. Place a layer of this mixture in a bowl and sprinkle with salt. Add another layer of tomato mixture and again sprinkle with salt. Continue until all mixture is used. Cover with weight and allow to stand overnight.
  2. On the following day, drain well. Then add horseradish, chopped green pepper, mustard and pepper. Mix well. Pack closely into sterilized jars and cover with boiling cider vinegar. Seal.
  3. makes about 2 quarts.
