White Bean Relish

Serves 8 people

Ingredients

  • 1 (16 oz.) can navy beans, drained and rinsed
  • 1 cup finely chopped tomato
  • 3/4 cup finely chopped sweet red pepper
  • 3/4 cup sliced green onions
  • 1/2 cup finely chopped celery
  • 2 Tbsp. chopped fresh cilantro or parsley
  • 1 jalapeno pepper, seeded and chopped
  • 1 clove garlic, minced
  • 1 (0.7- oz.) envelope Italian salad dressing mix
  • 1/2 cup dressing mix
  • 1/2 cup water
  • 1/4 cup cider vinegar
  • 1 Tbsp. olive oil

Directions

  1. Combine first 8 ingredients; set relish mixture aside
  2. Combine dressing mix and remaining ingredients in a jar. Cover tightly and shake vigorously. Pour dressing over relish mixture, and toss gently. Cover and refrigerate.
  3. Toss before serving. using a slotted spoon, serve relish with grilled fish, pork, burgers or vegetables
