Meatless stuffed peppers

Serves 4 people

Ingredients

  • 4 green peppers
  • 1 can bl beans rinsed and drained
  • 1 c shredded cheese
  • 3/4 c salsa
  • 1/2 c frozen corn
  • 1/2 chopped onions
  • 1/3 c uncooked lg grain white rice
  • 1 tsp chili powder
  • 1/2 tsp gr cumin
  • Sour cream (optional)

Directions

  1. Cut top off peppers

  2. Remove seeds and membrane, leaving pepper whole

  3. Combine beans,cheese,salsa,corn,onions,rice,chili

  4. powder and cumin in med bowl

  5. Spoon evenly into each pepper

  6. Place peppers in crockpot

  7. Cover

  8. Cook on low 4-6 hours

  9. Serve with sour cream if desired
